10 simple fish sauces
A good sauce really completes an excellent fish meal. Here are 10 simple fish sauce recipes for you to enjoy:
ADMIRAL SAUCE
Add two crushed anchovies, four chopped shallots, a teaspoon
chopped capers and a little grated lemon peel in a cup
of drawn butter sauce (see below). Reheat, season with salt and pepper and
Lemon juice. Serve hot.
ANCHOVIES BUTTER
Soak, bone, dry and mash eight salted anchovies. Add double your
fresh butter dough, mix well, press hard through a thin
strain, add a little more butter and the juice of one lemon. Manufacture
in small pats and keep in a cool place.
BEARNAISE SAUCE – I
Bring two tablespoons of vinegar and water to a boil.
Simmer a slice of onion for ten minutes. Take out the onion
and add the yolks of three eggs, beaten very lightly. Take from the
heat, add salt and pepper to season, and four tablespoons of
butter whipped until creamy. Butter should be added in small pieces.
QUICK BEARNAISE SAUCE
Beat the yolks of four eggs with four tablespoons of oil and
four of water. Add a cup of boiling water and cook slowly until
thick and smooth. Remove from heat and add chopped onion, capers,
olives, pickles and parsley and a little tarragon vinegar.
BUTTER SAUCE
Mix chopped hard-boiled eggs with a generous amount of melted butter.
Season with salt, pepper, and chopped parsley.
CAPER SAUCE – II
Make a pint of drawn butter sauce and add two tablespoons to it
capers, a tablespoon of anchovy essence and salt and pepper
to the season.
CREAM SAUCE
Cook together one tablespoon of butter and two tablespoons of flour. Add two
cups cream or milk and cook until thickened, stirring constantly
Spice with salt and pepper.
CURRY SAUCE
Fry a tablespoon of chopped onion in butter and add a tablespoon
of flour mixed with a teaspoon of curry powder. Mix well, add
a cup of cold water and cook until thickened, stirring constantly.
Remove from heat, season with salt and onion juice and serve.

Cook until smooth two tablespoons of butter and two tablespoons of
flour. Add two cups of cold water and cook until thickened, stirring
constantly. Spice with salt and pepper.
EGG SAUCE – I
Add half a cup of hard-boiled eggs, sliced or chopped by two
cups of drawn butter sauce.
GARLIC SAUCE
Peel the garlic and boil for an hour, changing the water four times.
Drain, chop and mix until you get a smooth paste with melted butter. Tea
the flavor is mild and resembles almond.
